Sage is one of my favourite herbs. And who doesn't like garlic!! So this works well for me. Hope it works for you too. This can be prepared ahead of time up to the point of putting it into the oven.

Equipment

Shallow roasting pan, Pastry brush

Ingredients

  • 2 Cornish hens, split into halves
  • 4 tablespoons butter, softened
  • 4 tablespoons fresh sage, chopped (or 3 tsp dried sage)
  • 2 garlic cloves, minced (or more)
  • 1 lemon, zest of, grated
  • 1/2 teaspoon paprika
  • salt and pepper

Instructions

  1. Blend 3 Tbs of butter with the sage, garlic, lemon zest, salt and pepper.

  2. Separate breast and leg skin from hens.

  3. Press the mixture under the skins and spread evenly.

  4. Melt remaining butter and add paprika Brush this butter over the hens.

  5. Place hens in single layer in shallow oiled pan.

  6. Roast at 400 F, uncovered, 40 to 45 minutes.

  7. Baste twice with pan drippings.
