  • 1 cup cooking oil
  • 3 eggs, beaten
  • 2 cups zucchini, grated
  • 2 teaspoons vanilla
  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups coconut flakes
  • 1 cup pecans, chopped

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix oil, eggs, zucchini, and vanilla.

  3. Add sugar, flour, soda and cinnamon, blending well.

  4. Stir in coconut and pecans.

  5. Bake in greased loaf pans about an hour or until a toothpick tests "clean".

  6. Cool 15 minutes in bread pans.

  7. Remove from pans-I wrap mine in foil and slice the loaves just before serving.
