Ingredients
- 1 cup of dates, chopped
- 1 cup of water, boiling
- 1 teaspoon of sodium bicarbonate (baking soda)
- 1/4 cup (half a stick) of butter, unsalted, softened
- 3/4 cup of granulated sugar
- 1 egg, large
- 1 teaspoon of vanilla extract
- 1 1/2 cups of flour
- 1/2 teaspoon of salt
- 1/2 cup of chocolate chips, mini
Instructions
Prepare the dates Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.
In a small bowl, pour the boiling water over the chopped dates and baking soda. Let it sit for about 5-10 minutes until the dates are softened.
Make the Batter In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the flour and salt to the wet mixture, mixing until just combined.
Fold in the softened date mixture until evenly distributed throughout the batter.
Gently fold in the mini chocolate chips.
Bake Pour the batter into the prepared loaf pan, spreading it out evenly.
Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
Then transfer the cake to a wire rack to cool completely before slicing.
