  • 1 1/2 lb tuna steaks (about 680 g)
  • 1/4 cup sherry wine
  • 1/4 cup light soy sauce
  • 2 tablespoons mayonnaise
  • 1 teaspoon curry powder
  • 1 tablespoon chopped fresh chives
  • Salt and pepper to taste

Instructions

  1. Pat tuna dry and season lightly with salt and pepper.

  2. Whisk together mayonnaise, curry powder, and chopped chives in a small bowl to make curry chive mayonnaise.

  3. Heat a nonstick skillet over medium-high heat. Briefly sear tuna steaks 1–2 minutes per side for rare to medium-rare; adjust time for desired doneness.

  4. Return tuna to the skillet briefly, spoon curry chive mayonnaise over each steak, and simmer 30 seconds to meld flavors.

  5. Serve hot with a drizzle of sherry-soy reduction from the pan.
