Mom and I had never even tasted Chinese food until about 1980 -- that's when the Hunan Chinese Restaurant opened up in Moberly. We had lunch there frequently and liked the chicken dishes the best. From the kitchen of Wanda Cupp Thornburg, Moberly MO.

Ingredients

  • 8 boneless chicken breasts
  • 8 boneless chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/2 cup catsup
  • 1/4 cup lemon juice, fresh

Instructions

  1. Arrange chicken pieces in baking dish.

  2. Mix remaining ingredients and pour over chicken.

  3. Marinate several hours or overnight.

  4. COVER. Bake in 325 degree oven for 1 hour.

  5. Remove cover and baste. Return to over and bake until chicken is tender.

  6. Serve with jasmine rice and a green salad.
