Equipment
Oven, oven rack, large bowl
Ingredients
- 3 mini flour tortillas
- 1 Little Gem lettuce, chopped
- 150g/5½oz cooked chicken breast, chopped
- 2–3 tbsp Caesar salad dressing
- 30g/1oz Parmesan shavings
- salt and freshly ground black pepper
Instructions
Preheat the oven to 220C/200C Fan/Gas 7.
Drape the tortillas directly over the bars of a grill or oven rack to create a taco shape, using about 2–3 rack spaces per tortilla. Bake for about 7–8 minutes, until golden and crisp around the edges. Leave to cool slightly so they firm up before filling.
Place the lettuce, chicken, Caesar dressing and Parmesan shavings in a large bowl. Mix well to combine and season with salt and pepper.
Carefully fill each taco shell with the chicken mixture and serve immediately. Any leftover chicken filling can be enjoyed separately or with more taco shells.
