Ingredients

  • 8 lamb cutlets, trimmed of all visible fat
  • 2-3 tablespoons Cajun seasoning
  • 2 sweet potatoes, peeled and chopped
  • Tomato chilli jam, to serve

Instructions

  1. Boil the chopped sweet potatoes in a saucepan of water until tender, then drain and mash.

  2. Coat the lamb cutlets evenly with Cajun seasoning.

  3. Heat a frying pan over medium-high heat and cook the cutlets until browned and cooked to your liking.

  4. Serve the Cajun lamb cutlets with sweet potato mash and tomato chilli jam.
