This recipe for British-Style Cheese and Onion Sandwich for 2 brings together 4 ounces cheese (such as Cheddar, Double Gloucester, Cotswold, or Red Leicester, for example), 2 tablespoons finely chopped sweet white onions, 2 tablespoons finely sliced scallions (I used a combination of scallions and chives) in a practical dish for home cooking. It takes about 10 min to prepare and cook. It makes approximately 2 servings.

Instructions

  1. Grate the cheese. Combine in a bowl with the onions and mayonnaise. Add salt and pepper to taste.

  2. Spread the mixture between slices of buttered bread.

  3. If adding the optional bacon, arrange the slices on the bread.

  4. The filling also makes an excellent topping for baked potatoes (with the bacon crumbled).
