  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 cup fresh or frozen blackberries

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Grease a 9x5 inch loaf pan or line with parchment.

  3. Whisk flour, baking powder, salt, and sugar in a bowl.

  4. In another bowl, whisk together oil and eggs. Stir in blackberries.

  5. Add wet ingredients to dry ingredients and mix just until combined; batter will be lumpy.

  6. Spoon batter into prepared pan and smooth the top.

  7. Bake 55-65 minutes, until a toothpick inserted into center comes out clean.

  8. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.
