Equipment

Oven, cookie sheet, parchment paper, mixing bowl, teaspoon, cooling rack, airtight container

Ingredients

  • 2 1/2 cups unsweetened flaked coconut or 2 1/2 cups shredded coconut
  • 1 cup chopped pecans
  • 1 cup dried fruit (I like craisins)
  • 1/2 cup semi-sweet chocolate chips
  • 7 ounces canned sweetened condensed milk

Instructions

  1. Preheat oven to 325.

  2. Line cookie sheet with parchment paper. Mix dry ingredients well.

  3. Add condensed milk until dry mixture is coated.

  4. Using a teaspoon put a heap of cookie mixture on parchment lined cookie sheet.

  5. Flatten mixture slightly (cookies do not spread).

  6. Bake at 325 for about 10 minutes or until coconut turns light brown ( be careful not to burn).

  7. Transfer cookies on cooling racks.

  8. Store in an airtight container.
