Equipment
Oven, cookie sheet, parchment paper, mixing bowl, teaspoon, cooling rack, airtight container
Ingredients
- 2 1/2 cups unsweetened flaked coconut or 2 1/2 cups shredded coconut
- 1 cup chopped pecans
- 1 cup dried fruit (I like craisins)
- 1/2 cup semi-sweet chocolate chips
- 7 ounces canned sweetened condensed milk
Instructions
Preheat oven to 325.
Line cookie sheet with parchment paper. Mix dry ingredients well.
Add condensed milk until dry mixture is coated.
Using a teaspoon put a heap of cookie mixture on parchment lined cookie sheet.
Flatten mixture slightly (cookies do not spread).
Bake at 325 for about 10 minutes or until coconut turns light brown ( be careful not to burn).
Transfer cookies on cooling racks.
Store in an airtight container.
