Ingredients

  • 2 cups of milk
  • 2 eggs, yolks and whites separated
  • 2 tablespoons of flour
  • 1/2 cup of granulated sugar
  • 1 tablespoon of butter
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract
  • 1 pre-baked pie crust

Instructions

  1. In a medium saucepan, heat the milk over medium heat until it's warm but not boiling.

  2. In a mixing bowl, whisk together the egg yolks, flour, sugar, and salt until well combined.

  3. Slowly pour the warm milk into the egg mixture, whisking constantly to prevent scrambling the eggs.

  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens to a pudding-like consistency.

  5. Remove the saucepan from the heat and stir in the butter and vanilla extract until the butter is melted and the filling is smooth.

  6. In a separate clean mixing bowl, beat the egg whites until stiff peaks form.

  7. Gently fold the beaten egg whites into the warm filling until fully incorporated.

  8. Allow the filling to cool slightly before pouring it into a pre-baked pie crust.

  9. Chill the pie in the refrigerator for at least 2 hours before serving.
