Wiener Schnitzel

This is an old Betty Crocker recipe that has been used by our family for years. The page is stained and wrinkled from so much use. Haven’t found a better recipe for this traditional recipe yet! My only modification in this recipe is less salt, and we use oil instead of shortening.

Kartoffelkloesse (german Potato Dumplings)

Just what the name implies – these are German-style potato dumplings, as found everywhere in the South of Germany, Austria and Bohemia. These are traditionally served with any roast with gravy, but most well-known as an accompaniment for a hearty Sauerbraten and red cabbage. Like polenta, second-day leftovers are a treat when sliced into slabs and fried in butter.

Healthy Vegetable Rissoles

This is a fairly simple recipe that helps to use up bits of pieces of vegetables in the fridge. You can substitute the beef mince with any sort of lean mince, and the vegetables are also able to be substituted as well as long as they are well grated or finely cut up. Quantities don’t have to be exact either – you can have more or less mince depending on personal preference. Serve on mashed potatoes or steamed vegetables with some gravy for a quick and healthy dinner!

Greek Style Chicken Rissoles in Tomato Sauce

This Australian favourite is given a Mediterrenean twist by the addition of a delicately-seasoned tomato sauce. This is wonderful served over spaghetti and the leftovers, if any, make a great meatball sandwich!
