Lamb and Mint Patties / Burgers

Quick and easy for a weeknight dinner. Serve on burger rolls or with veges or salad on the side. These patties are gluten-free

Choux Pastry- for Profiteroles, Cream Puffs or Eclairs

An easy pastry to make. Can be used for profiteroles, cream puffs or eclairs. Pastry can be frozen after being cooled. When defrosted return to the oven to crisp if required. Unfilled pastries can be frozen for up to two months. For eclairs top with chocolate and fill with cream. For profiteroles top with chocolate and fill with custard or vanilla cream. For cream puffs sprinkle with icing sugar and fill with cream. A quick creamy filling is to blend a box of powdered dessert vanilla custard pudding mix with a carton of thickened cream (just use a balloon whisk). It’s been a long time since I have used this recipe-so my servings is a guess

Pork and Cranberry Sausage Rolls

Sounds delicious; sounds SO easy: found this recipe in today’s ‘Herald Sun Sunday magazine’ and just had to post it here for safe-keeping! LOVE sage – and I’ll most probably add rosemary to the sage as I have a nifty Rosemary and Sage grinder and I’ve discovered that these two work just SO well together. I’m planning on making these for over the Christmas break. And I’ll certainly be adding minced garlic. UPDATE: since two reviewers have found that their sausage rolls were slightly burnt on the bottoms, if you know your oven is inclined to be perhaps hotter than some other ovens, perhaps cook them at a slightly lower temperature even if they take a bit longer to cook.

Sour Cream and Chive Potato Pancakes

Yummy pancakes which can be served for breakfast, brunch, as a snack or as a side-dish. Although the recipe specifies sebago potatoes, you can also use russet burbank or spunta potatoes. All of these are potatoes that are varieties which are good for baking. This recipe has been adapted from a recipe in the Australian Women’s Weekly’s ‘Potatoes: over 100 exciting ways to cook the humble spud’, recently reprinted by popular demand. It is essential to squeeze as much moisture as possible from the potatoes in step one before adding the potatoes to the other ingredients. Please feel free to vary the herbs according to your taste preferences.

Caramel Slice

I started making this 30+ years ago for the DH – from a Nestles condensed milk can, the DH prefers it without the chocolate topping so I have omitted it, never done it. I’ve only recently just started to make this again for him, don’t know why I stopped doing so in the first place, so it has been a rediscovery.
