Love to cook from scratch, so when I purchased a Belgian waffle maker I searched for the perfect authentic recipe and combined a couple to come up with this. My family continuously asks for it….yummy good with strawberries and whip cream or just warm maple syrup.
I used this recipe for week 26 of my food blog, “Travel by Stove.” I am attempting to cook on meal from every nation on Earth, and Belgium is my 26th stop. I never use any recipe for my blog that I’m not reasonably sure is from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. Please beware: I didn’t like this recipe because I find Brussels sprouts bitter enough without the addition of dark beer. You need to be a fan of that bitter flavor to appreciate this dish. If you don’t think you are, please don’t make this.
This recipe will easily double for a big group or potluck. If you can, use lacinato kale, it’s not as tough as curly kale and lends itself well to raw salads like this one.The dressing is lovely with orange juice, mustard, and balsamic vinegar!

From npr.org. Artistic yet easy. For a vegan version substitute agave for the honey. I gave the salad more of a Middle Eastern flavor with the addition of rose water in the dressing. To avoid confusion, the endive called for in this recipe refers to the cone-shaped variety (looks like a bullet or small ear of corn.) I used a head of white endive with the maroon/purple colored outer leaves.
