Tijuana Tacos
Living in Tijuana for years, it’s been hard to be back living in the U.S. Everyone once in a while, (once a month), I absolutely have to make this. Best if you can make homemade flour tortillas, but just fine with store bought.
Baja Seafood Tacos
This recipe comes from Mary Nell Reck, a local chef and restaurant owner who, sadly, is no longer with us. She also wrote a weekly cooking lesson for The Houston Post, which also no longer exists! This was from that paper on October 4, 1989.The prep work may seem a little lengthy, but it all goes together quickly once you start!
Baja-Style Grilled Tempeh Tacos
From the Veganomicon. I add lots of hot sauce to this (both in the lime creme and the tempeh marinade). It’s very pretty with shredded purple cabbage, but you can substitute with lettuce if you’d prefer.
Healthy Greek Style Chicken Tacos
Idea I came up with for something quick and healthy that can be mostly prepared in advance. I used a large cooked chicken breast cut-up but would also be a good use for leftover roast chicken. Makes 4 large tacos so I think would be a complete meal for two or a light snack / lunch for four, if using the smaller shells you’ll probably be able to fill six of them. I listed a gherkin because that’s what I used but you could also use a small handful of diced cucumber. Because it’s served slightly chilled I think this would make a nice and quick summer meal at the end of a hot day. You could also use a low-fat Greek yoghurt and/or omit the feta. There is not a lot of sweetness in the recipe so I couldn’t really say it was a kid pleaser, more of a slightly sharp taste from the salty and sour ingredients.
Oaxacan Tacos
These are traditional Mexican tacos. I’ve had the recipe for quite a while and it was originally found at allrecipes.com These are similar to soft tacos. Posted for Zaar World Tour 05
