Pork is symbolic of prosperity and is a favorite dish served for Chinese New Year’s. The Chinese also like to serve sweet and sour dishes as the word sour in Cantonese, sounds like grandchild, and portends the wish for offspring.
This is a quick Cantonese recipe for succulent, melt-off-the-bone tender chicken from Diana Kuan’s excellent blog, “Appetite for China”. The liquid should cover at 3/4 of the chicken; if you need more liquid maintain the 2 parts soy sauce to 3 parts water ratio.
This is a good recipe to have on hand if you’re stuck in a cabin in the Northwoods, craving sweet sour chicken, and there’s not one Chinese take-out place within 50 miles. This recipe is a combination of many recipes to make orange chicken that you get at Chinese take-outs. Very good with a strong orange flavor.
