Rice Flour Crepes / Pancakes- Gluten, Dairy and Egg Free

This recipe was given to me whilst I was on an allergy elimination diet. It has no gluten, dairy or eggs. A basic recipe, but not bad when your diet is restricted. The best rice flour to use is a very fine textured flour-you can buy it at most asian grocers. The coarser textured rice flour will taste gritty in your baked goods. It’s been a while since I made these-so I’m guessing that they serve 4. These are also vegetarian. As all gluten-free flours are a little different in how much liquids they absorb-add some extra liquid if required to achieve the right consistency

Spaghetti / Pasta Sauce

This is the sauce I’ve been making for years. It doesn’t make a huge quantity, but is easily doubled etc. I think it needs to be simmered for a long time to develop the flavour. I would serve this over any pasta or spaghetti shapes I have on hand and I also use this in my lasagnas. Feel free to add sautéed mushrooms, celery or a little grated carrot if you wish. I do sometimes, but find we like this simple recipe the best.

Beef Stir Fry – Asian Style

Preparation time does include marinade time, just to allow the marinade to soak into the beef. To get neat thin slices of beef I freeze the beef for 45 mins and then slice thinly, giving me the perfect cut. I don’t eat red meat but Hubby and Little Miss (DD) love beef and they enjoyed this quick recipe. Original recipe comes from Annette Sym’s which was featured on Channel Nine’s Extra but I have twinkled with it

Aussie Eastern-Styled Potatoes

I found this one while wandering the website of the Australian Vegetarian Society’s website. It really reflects how modern Aussie cuisine has been influenced by other regions of the globe. Plan to try this soon but posting it untried for the Zaar World Tour. As presented it uses the original ingredients with my interpretation of how to prepare the dish. Cooking time is estimated.

Zucchini and Basil Soup

A quick-to-prepare, low fat, inexpensive and yummy soup, adapted from a recipe I found in the Australian magazine ‘New Idea’. Not sure exactly when, but I think from 2005; it’s one I cut out of the magazine some time ago, and have made several times since then. Like most soup recipes, it’s extremely verasatile: you can add other vegetables that you have on hand that need to be used. I’ve added baby spinach leaves that needed to be used, and on one occasion, I added a packet of lentils. If you add other vegetables, you will probably need to add more stock. BTW, 750g = 1½ pounds.
