Adapted from an old Craig Claiborne recipe I like very much. Cooking time is very approximate and may go longer than stated (the original recipe indicated only about 1 hour but I have not found it to be done in that time when using the size of duck indicated). Preparation time does not include letting duck dry overnight.

I love this marinade but don’t always want it on hens so I have substituted 4 bone-in chicken breast halves for the hens. I marinate at least 2 hours, baked at 400º for 50 minutes or until the chicken is cooked through. I poured marinade over the chicken before baking and basted every once in awhile as it was baking. This recipe is adapted from the Southern Living 2000 Annual.
Fix this for a special dinner to impress your guests or for a romantic dinner for the one you love. You may need to decrease the sage if the stuffing mix already has sage in it.
