Anything with coconut and lime just takes me right back to the tropics. I love this soup. It’s actually a Thai recipe and is very easy and quick create. Plus, I usually have these ingredients on hand anyway, so it is also inexpensive. Enjoy.
This dish goes together very quickly. You will have dinner on the table in less than 30 minutes. If you don’t have cooked rice, start it before you make the curry and they should be finished at the same time.
This dish is loaded with flavor and makes a lovely, colorful presentation. You’ll want to serve with plenty of rice to absorb the wonderful sauce. (Noted added 11/05/07: I like to credit original recipe sources when known, but wasn’t sure about this one when I submitted the recipe. Fortunately, a reviewer pointed out that the recipe came from Cooking Light, so I searched their site–indeed, it was originally published in their September 2002 issue. This is DH’s recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.
