Raspberry Squares

I love raspberry and almonds together! I adapted this recipe from one I found on America’s Test Kitchen. Toasting the nuts adds great flavor so don’t skip this step. This recipe is easily doubled and would then be made in a 15″ jelly roll pan.

Butterhorns Aka Rugelach / Rugulach / Snails / Schnecken

One of my favorite cookies of all time, these are fabulous warm from oven, but also keep well in an airtight container. My Hungarian/Austrian Grandmom called these “Butterhorns”, an aunt on the other side called her version “Schnecken” and I have seen versions of this also under “Rugelach” or “Rululach”. It really does not matter what they are called, they are AWESOME!!!! (Chill time not included)

Potato Rissoles

Also known as Potato Croquettes, this version was adapted from Modern Cooking for Private Families and then published in The Great Victorian Cookbook by John Midgley, published in 1995…My mother used to make different types of croquettes when I was little, no doubt to stretch the meat for our large family…Decades have passed and the original recipes are long gone, but this one looks very much like one of hers…I’d like to surprise her one day with this old standby, so I’m placing it here for safekeeping!

Peppered Camembert Damper Bread Rolls

Served warm with soup these rolls will become a regular! Wrap dampers in a clean tea towel to keep them warm for up to 30 minutes. You could replace the pepper with sea salt and rosemary, and the camembert with grated tasty cheese.

Elswet’s Damper Biscuits

Living in a small town on another continent, there are a few dishes I miss. True Japanese cuisine which orignates from somewhere other than a SteakHouse, AUTHENTIC Chinese food, and good old English Damper are but a few. My Lady, being the Goddess She is, worked and worked until She got it right for me. These are biscuits, which taste like the beloved damper of my youth. If you aren’t familiar with damper, it’s a quickbread wrapped in aluminum foil and tossed onto the coals of the fire, usually in the fireplace. The original damper is very easy to make, but to make them as biscuits, took some work and lots of adjustments. I hope you enjoy these very soft, bread-like biscuits. They are NOT “Southern” biscuits, by any means.
