Bring out the mandolin, the deep fryer (or spray them with nonstick spray and bake them in the oven if you must), and a cream whipper (which needs 2 Nitrous Oxide pellets). (If you don’t have a cream whipper, you could whip with a hand mixer or stand mixer, it just won’t be as chic. But if you were looking for an excuse to get a professional cream whipper, here it is.) Unlike what you might expect, this is one of the easiest dishes in my repertory. In takes time to bake but preparation is a breeze. There are an awful lot of different moussakas that I suppose all originate from different parts of the Balkans. This is the most popular one in Bulgaria and when you order moussaka in a Bulgarian restaurant this is exactly what you are going to get. All others are named after the veggies used — moussaka with zucchini, with eggplant or vegetarian moussaka (rice and vegetables).

I just love eggs and often eat breakfast for dinner. Came across this recipe on the Internet and decided to post it for the Zaar World Tour. This particular one is so loaded with good things, it’s a one dish meal. Or you can serve it with a simple salad and a little garlic or peasant bread. The original recipe calls for 4 tablespoons of oil, but I’m planning to cut that in half.
This dish was made for me by a Bosnian friend of a friend :). I adored the taste and simplicity of the dish. True and honest comfort food.
