Pato Con Peras Catalan

This dish is a little work but the end result is glorious! The sauce adds an interesting finish. In Spain, this dish is traditionally made with goose, but duck is more readily available here.

Pickled Asian Pears (Wor Mei Lei)

This is from Eileen Yin-Fei Lo’s “The Chinese Kitchen”, one of the finest classic Chinese cookbooks in English. In this reciped, she uses “sah leh” (sand pears) and recommends substituting Bosc pears, but I have done this with Asian pears, specifically Hosui or Niitaka. The desirable characteristic is a hard, crisp fruit. This is a wonderful appetizer or amuse bouche … You can either pickle the pears whole, or for an appetizer, you can julienne them.

Khmer Beef

This is Cambodian Sesame Pear Beef in Red Curry, adapted from the Sala Bai Hotel School recipe for Stir-fried Beef with Red Chili Powder. Delicious!

Poached Pears in Kriek

Kriek is a special Belgian beer which some say is reserved for consumption by the fair sex! For this recipe the Kriek made by Lindemans is recommended. This recipe is taken from De Vlaamsche Pot by Marie Cattoor.

Stuffed Belgian Endive

A nice appetizer to have before a heavy meal, I love making these in the summer as a side for a none cooked meal.
