This aubergine bhaji recipe has won rave reviews from my South Indian in-laws, who have very discerning palates when it comes to authentic currys. This a wonderfully full flavored, vegetarian curry. The recipe is adapted from a recipe that I received in an email from Vegetarian Times.
This is how I sauté mushrooms and onions to serve with grilled steak. I’ve been doing it this way for years and never really thought of it as a recipe until today when my husband mentioned that it was the best he’d ever had. If you have leftovers, make an omelet with them with smoked swiss cheese and serve with hot, steaming bowls of tomato soup with basil. Just trust me on that.
This came from Taste of Home’s Quick Cooking and is much better than anything I’ve created on my own. The sauce is thick and gooy and goes well with so many things.
