If I would need to choose one cake in the whole world it would be poppy seed cake. You might have difficulties finding ground poppy seed in your country as it is forbidden in some as it is said to be addictive. This is a fact in my country of emigration so please think of me when you have your helping on this wonderful cake! NOTE: Semolina is wheat flour
I actually first saw their Austrian Shortbread recipe years ago in Gourmet Magazine. I was intrigued with the interesting yet simple technique involved in achieving an extremely light textured shortbread (see recipe). I originally made it just as the recipe specifies layering raspberry jam between the two layers, but recently decided to try a less sweet and simpler version, using fresh fruit mixed with a bit of sugar, flour and lemon. Both versions are delicious but with fresh fruit so abundant and beautiful at the moment, I opted for this blueberry/raspberry rendition today…and no one seemed to complain!!
This is another classic Viennese dessert. Thinly baked crepes, filled with a Quark Cream filling and finished in the oven. It is important to use authenthic German Quark/Topfen. Some of the upscale markets and German deli’s in the US carry it but if you can’t find it, there is a fantastic recipe for home made Quark already posted. “Recipe #476124”, it’s easy and inexpensive to make and works perfect for this recipe.
