Lozova Sur’ma (Bulgarian Grape Leaf Sarma)

This recipe is from a clipping out of an old magazine and came from an unnamed restaurant in Sofia, Bulgaria. Sarma is similar to Turkish dolma since this type of food dates from the days of the Ottoman Empire.

Princesses (Bulgarian Ground Meat Sandwiches)

This is an extremely popular snack food here. Lately it is becoming less popular in cafeterias but it is still a favorite at almost any home. Feel free to alter the condiments but keep the pepper, the onions and the cumin. You could also grate some cheese on top, or add it to the meat mixture.

Bulgarian Tomato Dumpling Soup

Make sure to prepare in a pot with a large diameter to allow dumplings to rise to the top. This recipe is posted for Zaar World Tour 2005. I haven’t tried it but it is from Sundays at Moosewood.
