Good Eats Roast Turkey

This recipe for Good Eats Roast Turkey brings together 1 (16 lb) frozen young turkey, 1 cup kosher salt, 1/2 cup light brown sugar in a practical dish for home cooking. It takes about 15 hrs 20 min to prepare and cook. It makes approximately 16 servings.

Delia’s Cornish Game Hens (Or Chicken and Rice)

This is my great-aunt Delia’s famous New Year’s Day main dish, with notes for a cheaper version that my mom made most Sundays. It is so good that my sibs and I would fight (literally) over the last bits of rice clinging to the pan! Don’t be tempted to replace the butter with margarine–this is a holiday meal, after all, and you just don’t skimp for holidays! Also, don’t forget to dry the poultry. If you don’t, the butter won’t stick to the skin and help crisp and flavor it. Oh, and canned mushrooms work fine instead of fresh.

Roast Cornish Game Hens With Cornbread Stuffing

I am a huge fan of cornish hens because they are all white meat – my favorite part! This is a great main course for a special occasion or holiday with a small gathering, or just for a special weekend treat. YUMMY!

Hawaiian Cornish Hens

I don’t like traditional stuffing, so this unique stuffing for the cornish hens caught my eye. We had this for Thanksgiving a couple years ago, one of my favorites!
