Super easy to make, Eton Mess is an all-time classic British dessert. The dish was traditionally served at Eton College but how it came to have the name is not clear. One story is a Labrador dog sat on a picnic basket in the back of a car and squashed a strawberry and meringue dessert. The dessert is quick and easy to make and makes great use of ripe strawberries at the height of summer when they are plentiful. Frozen or canned strawberries don’t work. This recipe is from Elaine Lemm, a well known food and drink writer in the UK. Enjoy!
Posted for ZWT6. Untried by me at the time of posting but I do mean to try this as it sounds like something everyone would enjoy. Found on the web and based on their intro they say it is best to bake these to the point where they are still a bit gooey for best flavors. Hope you enjoy! Great For: Nutritious quick snacks straight from the store cupboard, comfort food, tasty breakfast bars.
This is a recipe from another web site and something DH grew to love when he lived in the Midlands of England. I usually substitute Fruit Bits by Sunmaid for the raisins and just use 1 cup of them.

Canada, and especially British Columbia, are known for their great berries! I love raspberries and this is a great way to have them all year long! Adapted from Vegetarian Times magazine.
