DH and I enjoyed this flavorful, easy to make recipe from the January 2009 Bon Appetit. Carbonnade is a Belgian beef stew flavored with beer, onions, and brown sugar. Bon Appetit substituted chicken thighs for this twist on an old favorite. Serve over egg noodles.
This casserole is of Austrian origin and was brought over by immigants before the turn of the last century. My mother made a simplified version of this recipe for the family (recipe#512343); but, for a special occasion, this recipe is an authentic version.
My daughters call this “Noodle Rice” and we have some variation on it several times a month. I’ve used broken spaghetti, vermicelli, and orzo in place of the egg noodles (choose eggless pasta to be totally vegan…well, duh, you knew that!) I also usually throw in a handful of golden raisins with it and up the water just a bit to account for plumping them up – the kids eat those first! Be creative…substitute a little lemon juice for part of the water if it’s going with fish, etc. A nice, reliable add-on to dinner, originally from “Betty Crocker’s New Int’l Cookbook.”
This is the simplest pork and noodles recipe I know. It takes only 5 ingredients – two of which are salt and pepper. My kids LOVE this!! You’ll be amazed at how good this is. I cook the meat in my crockpot, but my mom has always done it on the stovetop. I never believed her when she said it was flavored basically with salt, pepper and beef broth. I thought I was so smart and added spices and garlic, but I found that nothing I tried was as good as her version. As they say, mother knows best….uuggghhh!
