I love Tacos Pescado, but I’m not a fan of the Baja Style. I love the breaded and fried fish, but I just can’t embrace having it served in tortillas with cole slaw. I found this style of Tacos Pescado while eating at J. Anthony’s Seafood Cafe in San Antonio, TX. I’ve duplicated and improved the style somewhat.
I have been playing with dates again and I came up with these bars. These are a dessert date bar rather than a breakfast date bar. I hope you like them!
This little delight was inspired by the date May 4th. The day before Cinco de Mayo. It’s quick, easy to put together and pretty healthy.

SO good. The beautiful color of blue for the sea, tropical in taste and sure to please. Made these up for my neice’s Bachelorette party. Number of servings depends on the size of your cups; I used 2 oz cups, so mine made about 20. Sugar free versions of jello work just fine as well!
