This recipe makes a nice dinner and is from The Pillsbury Family Kitchens’ Cookbook. I use 1 can (10 3/4 ounces) chicken broth and enough water to make 2 cups (and heat it in microwave) in place of water and bouillon cubes. This recipe can also be used with quartered or cut up frying chicken. I have only made it with the cornish hens.
Years ago I found this recipe on a box of Uncle Ben’s original rice. I can always get the man at the meat counter to cut these in half for me even when they are frozen. My daughter loves getting her own “little chicken”
This dish a winner! Simple, easy to make and it has great presentation. I’ve made this 3 times so far and it’s never failed. The hens cook perfectly and the taste is wonderful. #69724 makes a perfect side dish for this entree. The recipe comes from the Aug ’03 issue of Gourmet. This is a great meal for entertaining! I served it for 10 this weekend and everyone loved it.
