Bolivian-Mexican Style Corn Pie

This recipe halves easily. “If you have a cast-iron skillet, you can make so many things in it for breakfast, lunch and dinner,” says Willis, author of “Basic to Brilliant Y’all” It’s a roasting pan. It’s a baking dish. It’s a skillet.” To me, the cast iron skillet is symbolic of the south. If you’re not crazy about allspice or cloves, leave them out, though it is original to the recipe.

Bolivian Corn Pudding

This is a traditional corn pudding, served at Christmastime in Bolivia. Maybe I’ll make it this year as part of our menu. The recipe comes from 365 Ways to Cook Vegetarian. The original recipe called for raisins, but I’ve omitted them.

Basque Cornbread (Pain De Maïs)

Columbus took cornbread back to the Old World in the 15th century, and thanks to some of his Basque crew, cornbreads took hold and are still produced in local bakeries. Nice with a hearty soup or stew.
