Chilled Avocado Citrus Soup
The MOST delicious chilled soup I have ever had, this is from Nadsa De Monteiro of Elephant Walk, a French Cambodian Restaurant in the Boston area.

i began with Recipezaar’s Ga Kho but was in a BIG hurry and misread the directions. That, plus my usual tweaking, left me with a wonderful dish which is even quicker to prepare. Enjoy!
This is a Khmer classic, a great lunch dish, Khmer Beef Salad… made with very lightly cooked beef and some classic Cambodian vegetables. Makes for a lovely colourful salad and so easy to make
From Mark Bittman in The New York Times. “This recreation of a Cambodian dish may not be entirely authentic, but it is really good, a striking balance of mildly sweet and mouth-puckeringly sour. And if you start with peeled shrimp, it is also ridiculously fast. Let the lime-and-sugar mixture cook until it is syrupy; this won’t take long, about three minutes, but it will guarantee that the liquid coats the shrimp nicely.”
Moroccan recipes are so flavorful and delicious and this recipe sounds wonderful. Prep time does not include marinating time. Not sure where I originally found this recipe — it has been in my recipe file for a long time. Posting here for safe-keeping.
