Adapted from a recipe I found in this morning’s Herald Sun’s Sunday magazine, too late for today’s breakfast but I plan to try it soon. It is from Donna Hay’s ‘Tastes of Autumn’ magazine but to me this sounds like an anytime of year breakfast idea! My only additions were garlic, rosemary and sage, simply because I enjoy all of these in many savoury dishes, but I’ve listed them as optional. Feel free to add your favourite herbs. So that the omelet retains its lightness, I’d be disinclined to add anything else to it, but I’ll certainly be making this with some mushrooms. YUM! OOPS! Chocolatl observed – quite rightly – that I’d omitted the butter from the Ingredients list. Add 1 tablespoon butter, preferably unsalted to the pan in step four.
Traditional Australian snack for when unexpected guests drop by. To be truly authentic the cheese must be the very cheapest brand available and the crackers a little stale. Use a good and strong fresh onion though so your guests don’t know the difference.
Corn tortillas filled with a cheesy chicken and salsa combination, then baked in the oven with a salsa and cheese topping. Serve with a salad or shredded lettuce and sour cream. Delicious. This recipe is gluten free but if you don’t require your meals to be gluten free then you can use regular tortillas and your favourite salsa.
I bought some marinated feta at Eumundie Markets recently, and was VERY impressed, so I did what all cooks do, I copied it 🙂 This is the basic recipe, you can add Parmesan cheese, toasted pine nuts, or even chopped olives. you can use any pesto for this, I have tried it with sundried tomato pesto, and it was good, but I prefer the fresh taste of the basil pesto:) this will keep well in the fridge, and the flavours meld better if made the day before its needed. I have made this with soft greek feta, but I have to say I prefer the aussie feta, as it holds its’ shape so much better. If there are any leftovers, you can use it as a base for Greek pizza…yummy
This dish is quick and easy, it looks like a lot of work to the person who is eating it but it’s not. I made it for a very picker eater and she enjoyed it as well. Hubby (DH) also really enjoys this one. The Chicken schnitzels breast should be pre coated with spices and bread crumbs but still raw. I normally buy the chicken schnitzels pre-made from our butcher. The pasta sauce I use is called Barilla Olive (my favourite), which has chunky bits of olives in it so it adds to the texture. I don’t use the complete 400 grams of the pasta sauce. Cheese – you can use your favourite cheese, I sometimes use a little bit of Mozzarella cheese, Parmesan cheese & Cheddar cheese (Also known as Tasty Cheese in Australia) but most times I normally use whatever cheese I have at home. As long as it can melt – Enjoy
