Gjelle Me Zarzavata (Albanian Casserole)
Adapted from The Complete Round the World Meat Cookbook. I think you could probably omit pouring the oil over the top, unless it looks terribly dry.

This is a vegetarian version of a traditional Albanian dish. It makes a tasty side and is delicious served with yogurt, which is commonly eaten in Albanian meals. You can use any mushrooms you want, but the stronger tasting ones are better. Spice to taste, I like more red pepper than the Albanians probably do. From the The Great Book of Couscous by Copeland Marks. Algerian comfort food. Use as a side dish or a main dish with a nice salad.
Here’s a great scalloped potato recipe that’s so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.
This is DH’s recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.
