Zucchini and Basil Soup

A quick-to-prepare, low fat, inexpensive and yummy soup, adapted from a recipe I found in the Australian magazine ‘New Idea’. Not sure exactly when, but I think from 2005; it’s one I cut out of the magazine some time ago, and have made several times since then. Like most soup recipes, it’s extremely verasatile: you can add other vegetables that you have on hand that need to be used. I’ve added baby spinach leaves that needed to be used, and on one occasion, I added a packet of lentils. If you add other vegetables, you will probably need to add more stock. BTW, 750g = 1½ pounds.

Braised Chicken With Lemon and Honey

Another great recipe from ABC.net’s website and Chef Bill Granger. This chicken recipe will also be included in the Zaar World Tour 2005 swap, Australia.

Australian Grapefruit Bowls

This sounds absolutely delicious! Posted for the Zaar World Tour 2005. This recipe would photograph beautifully, hint hint. Prep time does not include time to chill.

Crumpets With Cheese & Bacon

Nice way to enjoy English crumpets. If you’re from a country where they’re not widely available do yourself a favour and make some from scratch, there are plenty of recipes on RecipeZaar for them. This recipe really works a lot better using natural cheese rather than processed cheese.

Hopel-Popel

This dish could be served as a brunch dish, or for any light meal or snack. When I came across this recipe tonight in a recipe book – The Midweek Cookbook: 200 Ways with Potatoes – I really hadn’t looked at since the seventies, the name of this dish intrigued me. A web search produced nothing of relevance, just lots of references to dog breeding kennels! So unfortunately I know nothing of the origins of recipe’s name. I’m posting a C21st adaptation here so that I remember to make it some time! It’s actually rather similar to what I’ve always referred to as a chip omelette, although I usually make that with diced raw potatoes.
