Mini Honey Cheesecakes

A recipe I found in a 2002 copy of the Australian magazine “Super Food Ideas”. I haven’t made it yet but I’m posting it here for safekeeping and because I couldn’t find anything similar already posted. From the accompanying picture, these look like cakes (something like Greek lemon cakes) rather than what normally comes to mind as cheesecakes. They sound really easy to make, I love the sound of the ingredients and they certainly sound worth trying! The estimated preparation and cooking times below do not include cooling time.

Crab Frittata

Yet another way to make use of those big blue crabs we are catching. 1 crab gave us 1 cup of beautiful meat for this.I can’t do what I suggest in the last step as I don’t have a griller (broiler) so I finished it with the lid on for a couple of minutes to set the top. That worked fine and would be good for camping. Just cook the onion and potato slower and longer if you can’t access a microwave.

Pumpkin Hash Browns / Vegetarian Pumpkin Burgers

Found this recipe in a Weight Watches Magazine Nov/Dec 2006 edition. They called them pumpkin hash browns but they are more like pumpkin patties. The patty could also be used for a Vegetarian Burger. They recommended Weight Watchers cottage cheese but I think low fat cottage cheese would be alright. Because I don’t like eggs, I used ‘Egg Like’ which is an egg replacer. I skipped the ‘garnish step’ and serve them with to tomato sauce.

Caramel Scones by June

These were my favourite–Mum use to make them often. I always loved the melted caramel on the top. Cook time for me is usually 12 minutes.

Mice ” Kids & Adults Will Love!”

Pears made into cute little mice! * A quick pear dessert – In general, a typical Australian dish is a typical British dish, which is to say a typical European or American dish with most of the subtleties of flavour (and difficulty in making) removed. The following dessert is a genuine Old Family Favorite in Australia. * Candied angelica is almost impossible to find in North America. Anything else with the appropriate properties of sweetness and shape may be substituted, e.g. a piece of chocolate or candy cut to size, such as an Ovation mint divided longitudinally or shoestring candy. You can also add the shoestring for whiskers.
