Armenian Zeppole (Bishi)

This is my grandmother Hyganoush’s recipe. Light and fluffy and delicious. Can be served with maple syrup or confectioners sugar or BOTH! Great breakfast! I should also add that batter can be mixed the night before and placed in refrigerator overnight to rise. Take out and leave at room temperature for 1/2 hour or so before frying. When we were kids we used to see all sorts of people and animals in the shapes.

M’shewsha – Algerian Egg Dish for Breakfast or Coffee

This is a traditional family recipe for M’shewsha. M’shewsha is a delicious Algerian dish made with lots of eggs, a little semolina & a little flour. You pour warm honey over it & allow it to soak in……..delicious! M’shewsha can be enjoyed for breakfast or with afternoon coffee – it tastes like a cross between a fluffy pancake & French toast! Traditional, it is thought to give you a lot of strength – manual labourers eat it often, as do women who’ve just had a baby! This is also great for Suhor during Ramadan – yum!

Salvadorian Quesadilla Cake

No, no tortillas were harmed in the making of this cake. It is similar to a pound cake and gets its unique flavor from a small amount of parmesan cheese. I was first introduced to this cake by my friend Rina and was so happy when I stumbled upon the recipe. It is especially good with coffee for breakfast. From Gourmet

Rabanada (Brazilian-Style French Toast)

This Brazilian breakfast treat is usually served around Christmastime. Being soaked overnight, it makes for a festive holiday brunch item. Cooking the toast long enough for the outside to get crispy still leaves it with a custard-like interior that melts in the mouth. This recipe comes from Chow, by Aïda Mollenkamp. I haven’t tried this recipe yet, but I may try it with less oil on a griddle, and although a topping is not mentioned in the recipe, I might use chocolate syrup and whipped cream. Pretty rich, but it is holiday fare after all. nt (not tried)
