Peach Melba With Amarena Cherries – Pfirsich Melba

In Austria, every Cafe and Ice Cream Parlor serves Peach Melba during the sommer months. I worked in an Ice Cream shop in Salzburg in the 1960’s, this is how we used to make it. Amarena cherries are available in Italian markets, they are dark red and have a slight almond aroma. Use real, only lightly sweetened whipping cream to garnish, serve with vanilla wafers.

Fish Cakes

i found this in a booklet from a local supermarket and it was just the thing i had planed for dinner tonight. I adopted it and added some more spices. It is great for potluck, brown bagging and can be frozen. They are high in protein and very tasty. Serve with any kind of your favorite sauce to make them special. For dinner we have a lot of green salad with them and some kind of tomato-based sauce.

Vanillekipferl (Vanilla Cookies)

Vanillekipferl are very traditional German and Austrian Christmas Cookies. There is no Advent or Christmas without these typical cookies in the shape of a horseshoe or half moon. Use the best vanilla bean you can get, because it makes these cookies so special. The dough is a shortcrust and to shape the cookies might be tricky sometimes, because the dough will not stick together as you would like it to. But if that happens, the dough is right on, just be patient and take some time.

Frittatensuppe – Beef Broth Topped With Strips of Sliced Pancake

Austria is a heaven for soup lovers, no meal starts without it. Fritattensuppe is traditionally a home made beef broth topped with rolled up and then thinly sliced strips of pancake, called frittatas. For this application, the pancake doesn’t have to be super thin and should be fried golden brown.
