A yummy tropical drink from Trinidad/Tobago. Passionfruit in the Caribbean and Central America are yellow and are sweeter than the purple ones found in the U.S. The purple ones also yield more juice. You might need to add more sugar if using the purple ones.
The lime juice and salt mellow out the garlic flavor. This sauce was originally created for Shark and Bake, but it can be used with any grilled food. From the Barbecue Bible. If not serving this immediately, cover tightly and refrigerate for up to 3 days.
I got this recipe, if you can believe it, from an advertisement for Gain laundry detergent that appeared in Southern Living magazine last year. I’m posting because I’m tired of digging through clippings to find it (thanks, food.com! I might someday be organized). It is really, really tasty on boneless skinless chicken breast halves, marinate a little while and then grill. Would love to hear some other uses. I used lime juice as that’s what we have here. Did not add wine as I’m allergic, but did add a dash of Salsa Magli, in the past have used a little chipotle, too. Original recipe calls for 1 tsp salt which I did not add. Keeps well in the refrigerator.
During our annual New Years Eve Party, while drinking mass quanities of these, one of our guests came up with the name. If you like dill pickles but hate the afterburn of Tequila shots this will be your drink of choice! When drank correctly (no breathing inbetween shots) there is no tequilla burn AT ALL ! We have even concluded that the pickle juice negates a hangover! And this method is way neater than limes and salt and is WAY more fun to order at the bar.
