Gochujang red beans and kimchi rice bowl

This spicy bowl of goodness comes together in minutes. It uses store cupboard ingredients, packs in over three portions of vegetables and is one of those recipes that will get you out of trouble if you can’t decide what to have for dinner. A side of whatever greens you have, a bit of kimchi and spring onions and you have a gut-boosting recipe that will support your healthiest self. Each serving provides 462 kcal, 22g protein, 38.5g carbohydrate (of which 7g sugars), 20.9g fat (of which 3.3g saturates), 16.2g fibre and 1.1g salt.

Rice bowl with ginger, radish and avocado

A rice bowl is a wondrous thing, but often – despite the simplicity of its title – a rather cluttered and complicated one. Here, I have pared it back, to make a gorgeously seasoned rice bowl, with nothing more than a few seeds, herbs and radishes stirred through it, and an avocado to top it. It’s a simple take on an inspiringly expansive idea. So please use this as a starting point only. It’s very much a non-recipe recipe, and every time I make it, I add something different, depending on what’s to hand. Each serving provides 498 kcal, 13g protein, 61g carbohydrate (of which 4.1g sugars), 21g fat (of which 4g saturates), 6.1g fibre and 1.9g salt.

Pav bhaji

Pav bhaji is carb heaven. Spiced mashed potatoes and vegetables are scooped into soft bread rolls. They are a cornerstone of street food in Mumbai and made with their own masala spice blend. There’s lots of ingredients here, but they are actually very easy to make.

Vegan mushroom stroganoff

This vegan mushroom stroganoff is served with a flat ribbon pasta, such as pappardelle or fettuccine. It’s rich and full of flavour and quick to cook – ideal for a midweek supper. Each serving provides 503 kcal, 14g protein, 66g carbohydrates (of which 6g sugars), 19g fat (of which 6g saturates), 5g fibre and 1.7g salt.

Chickpea, spinach and egg curry

This vegetarian low-calorie chickpea curry makes a wonderful, easy after-work meal, and is ready in less than 20 minutes. It’s also vegan if you leave out the egg. Each serving provides 441 kcal, 26g protein, 92g carbohydrates (of which 8.5g sugars), 20g fat (of which 3.5g saturates), 15g fibre and 0.6g salt. With a GI of 45 this meal is high protein, low GI.
