Roasted Cornish Hens With Honey Mustard Glaze

The original recipe came from “The 21 Cookbook: Recipes and Lore from New York’s Fabled Restaurant” by Michael Lomonaco and Donna Forsman. I found the cooking time given was insufficient and the recipe made enough glaze for eight hens, never mind four! Obviously, I will be using the changes I made to the recipe. The end result was a big hit with my family and guests, though!

Soy and Vinegar Marinated Cornish Game Hens

From Food For Thought, Favorite Recipes of Morristown-Beard School. There is salt listed as an ingredient (to taste) but remember soy sauce is quite salty! Goes well with rice. Marination is from 2-12 hours and is not included in prep or cook time.

Sage and Lemon Cornish Game Hen

NOTE: Make at least 12 hours in advance. This only makes one hen (2 servings), but if you need more, you can double it, etc. We had this for Thanksgiving dinner. It was less expensive and less filling than turkey… and it didn’t make us sleepy after dinner 😉
