Some of the best recipes are the most simple. This is one of those. I prefer it just as written, but you may add any ingredients you choose such as chopped onion, scallions, chives, water chestnuts, chopped hard-boiled eggs, lemon-pepper, dill, parsley, etc. I often take this to potlucks when I need a quick and easy (and economical) dish. I’ve never had to take home left-overs. Tuna pasta salads can be found at many pot lucks. Albacore tuna is plentiful on the Pacific Coast, and this recipe represents the Western U.S.
Chickpeas are the base of this protein-packed sandwich filler. Add Tabasco and pickled jalapeños for a lunchtime kick. Each serving provides 197 kcal, 7.7g protein, 15.2g carbohydrate (of which 2.1g sugars), 10.1g fat (of which 0.8g saturates), 6.3g fibre and 0.45g salt.
Put this filling tuna salad together the morning or night before and take it to work. Keep a pot of homemade dressing in your desk drawer for your salads.
Use up leftover salsa or make one from scratch for this hearty couscous salad. Top with grilled halloumi or chicken, if you like.
