Indian Chana Masala

I make this recipe all the time! Watch out, it’s very spicy! 🙂 And quite healthy, too. Eat the chana masala as a curry over rice or my favourite, straight with paratha. Every now and then I like to add about 1 tsp of plain yogurt on top of the chana masala in the bowl, and then add the cilantro on top of that. Nigella’s Masala Omelett

This recipe comes courtesy of the domestic goddess herself Nigella Lawson. A beautifully flavoured flat omelet that can be eaten any time of day as a snack or light meal. We especially like it in crusty rolls/French stick as a hot sandwich, but would be great rolled up in a chapatti or just eaten flat on a plate.

Indian Masala Chai

There are many versions of this tea. This is a good one from Food & Wine magazine. This would also make lovely gifts. Just package up the dry ingredients and write out the directions!

this is a classic indian masala chai. i would venture to say half a billion people are drinking some version of this every morning. and for good reason — it is super delicious!

Black-Eyed Pea Masala

This is a recipe that I adapted from a recipe my MIL made while I was in India. It is FABULOUS, and is even served for breakfast quite often in her house! (I could eat it for every meal LOL) I donut know the actual name of the chilies they use, but at home I generally use either 2 of the small chiles labeled “hot green chiles” from the market, or I use serranos. The ginger I generally just run over my microplane.
