Afghan Tea – an Authentic Family Recipe
This is a great recipe for the typical tea drunk in Afghani homes. It is easy to make and very warming. Traditionally you drink it with sugar but if you wish to leave it out or sub with Splenda etc, that’s OK!

Kesra is one of Algeria’s many breads. Made from semolina you can make it purely from fine semolina should you wish. Kesra is delicious served slightly warm with soup or at room tempreture with jam.

This is the most famous Algerian ‘heloua’. You will find it at all the weddings & special occasions. It isn’t all that difficult to make but is a bit time consuming. It freezes OK too! M’shewsha is a delicious Algerian dish made with lots of eggs, a little semolina & a little flour. Most traditional recipes call for quite a lot of oil, my other recipe has reduced oil in it but I wanted to find a healthier version – here it is! You pour warm honey over it & allow it to soak in……..delicious! M’shewsha can be enjoyed for breakfast or with afternoon coffee – it tastes like a cross between cake, a fluffy pancake & French toast! Traditional, it is thought to give you a lot of strength – manual labourers eat it often, as do women who’ve just had a baby! This is also great for Suhor during Ramadan – yum!
