A very old family recipe. This is how my grandmother made it. All measurements are approximate; my grandmother never measured anything. You can substitute any combination of cheeses. This recipe is for appetizer sized portions. If you want it for a side dish, don’t cut the fillo in half. Practice folding boereg, using a piece of paper or a napkin.
This is my grandmother Nina’s recipe and yields about 4 dozen cookies, which seems like a lot, til you taste one, then it won’t be enough!
Delicious traditional recipe. A little more cheesy than the typical recipe. I have included more detailed instructions on rolling the filo into triangles, for those who haven’t used filo before. It can be tricky. I teach my friends to fold the triangles by practicing on a napkin to get the hang of the triangle fold. PS. Contrary to Tarra’s opinion, there is NO comparison between filo and puff pastry, and ricotta has almost no taste…similar to cottage cheese!
This is my grandmother Hyganoush’s recipe. Light and fluffy and delicious. Can be served with maple syrup or confectioners sugar or BOTH! Great breakfast! I should also add that batter can be mixed the night before and placed in refrigerator overnight to rise. Take out and leave at room temperature for 1/2 hour or so before frying. When we were kids we used to see all sorts of people and animals in the shapes.
This is a tasty spring salad. You may substitute any low cal dressing for the one included in the recipe, I sometimes like a honey french instead of the vinaigrette. This is low cal too!!
