Pickled eggs are popular fare for pub-goers and low-carbers. Eggs used for pickling should have clean, sound shells. Small or medium eggs are usually a good choice for pickling so the seasoning can penetrate deeply into the egg. Fresh eggs are the best to use for pickling to ensure the highest quality possible since the eggs will be stored over a relatively long period of time. However, eggs at least a few days old will peel better after boiling. This is a refrigerator pickle only and are good for months properly refrigerated (if they last that long). 😉 Courtesy of helpwithcooking.com
This is my another of my cousin Shawn Michaels Pub recipes. He eats them cold for breakfast with toast
This is my mums recipe which she has been cookin since the early 1950s, I’ve asked her where she got it from but its been that long she can’t remember; I had cravings for this whilst recently pregnant and religiously cooked one on a Sunday which I ate all to myself as DH was on a diet and my daughter decided she didn’t like it without trying it (typical 5 yr old!) I usually don’t measure the sugar or sultanas which are scattered over the bread and just guess it, it all depends on how sweet your tooth is. Prep time includes standing time.
I was born & raised in “Parkin Country” & I can’t get enough of the stuff! I love it when it’s really rich & sticky – fabulous with a cup of freshly brewed coffee. This is one version of Parkin, recipe from Asda.
