Tiroler Cake

This is my cousin’s recipe. A ‘cake’ in Swiss is traditionally one made in a loaf pan. This is a good coffee cake.

Rotwein-Nudeln (Red Wine Pasta With Spring Onions)

Rotwein-Nudeln Mit Fruehlingszwiebeln, from a Betty Bossi cookbook (Switzerland). A Swiss friend prepared this for me when I was living overseas. It is a simple but tasty dish. The salt helps the pasta absorb the red wine color. I have translated the recipe from German so it may need some tweaking.

Pretzel Knots (Rolls) – Cut Restaurant, Las Vegas

CUT is a Wolfgang Puck restaurant in Las Vegas. Recipe published in Bon Appetit, March 2009. Serve straight from the oven. Update 3/5/09: The original recipe (below) calls for letting the dough rise in the refrigerator. However, it seems that the more effective method is to let the dough rise at room temperature.

Weight Watchers Parmesan Crusted Chicken Schnitzels

This delectable low-calorie chicken dish is packed with flavour but not calories and is perfect for anyone following the 5:2 Diet as well as Weight Watchers. It’s a favourite meal for me and my husband when we are on a diet, when I serve it with lots of steamed greens and a grilled tomato. For a gluten free version use crushed cornflakes in place of the breadcrumbs. NB: Please note these don’t have any oil brushed on them as they are for a very low-calorie diet! If you are NOT worried about the extra calories, please brush the chicken fillets with a little oil before baking, or pan-fry them in a little oil or butter.
