Tres Leches Cake is a very moist cake filled with a mixture of “milks.” It is a favorite Mexican and South American Dessert. I got the recipe from Chela, my housekeeper who is from Mexico. The Cake preparation includes 3 parts: the cake, the filling, and the frosting.
These sweets made with condensed milk and chocolate belong to that marvelous category of Brazilian “docinhos.” They are perpetual favorites with children and adults alike. I don’t think I’ve ever seen a Brazilian birthday party without them and they are a huge success with Americans too.
This no-cook candy tastes somewhat like the inside of a Reese’s peanut butter cup. It can be eaten on its own, or crumbled as a topping for ice cream or cake. (There is also a brazilian beef dish which people in the north of the country call “paçoca”. It’s more broadly known as paçoca de pilão to distinguish it from this candy.) Manioc is also known as cassava.
This is Emeril’s version of the national cocktail of Brazil, which is especially refreshing during warm weather. Sort of like a Brazilian Mojito (without the mint)! The key to making it strictly Brazilian is to cachaca, which is Brazilian brandy made from sugarcane.
This recipe includes sweet potatoes and black beans with a simple mayonnaise dressing. I have not tried this yet but is sure sounds good. From recipelink.com
