Baja Spinach Dip
Addictive! Swiss chard is a good sub for the spinach. I have also divided this into smaller portions, frozen, and thawed in fridge. Works great!
Rock & Roll BBQ Salsa Loco (Similar to Baja Fresh)
This is a great salsa recipe. It takes a little more time but it’s worth it! My friends compare this to Baja Fresh’s dark salsa. This is a bit thicker and spicier though. Great on fish tacos or with tortilla chips.
Baja Blue Jello Shots
SO good. The beautiful color of blue for the sea, tropical in taste and sure to please. Made these up for my neice’s Bachelorette party. Number of servings depends on the size of your cups; I used 2 oz cups, so mine made about 20. Sugar free versions of jello work just fine as well!
