This is a somewhat simplified version of a recipe from ‘Basque Cooking and Lore’ by Darcy Williamson. Our second home is in SW Idaho, which has a strong Basque community, and we have learned to love the Basque cuisine.
Marmitako is a traditional Basque dish, which I have yet to make myself. I’m told it’s delicious and seems very easy to make. I like the one pot idea! I’m unsure of the serving size, it seems like a lot to me for 4 people!
This was my dinner tonight and i really loved the taste of the chicken and the rice. It is kind of a paella casserole
